How to make it

  1. Rinse the white rice in a sieve under cold water until the water runs clear, then drain well to remove the excess starch.
  2. Put the rice, water, cinnamon stick and a pinch of salt in a heavy saucepan and bring to a boil, then reduce the heat to low, cover and simmer for about 15 minutes until most of the water is absorbed and the rice is tender.
  3. Pour in the evaporated milk and stir well, then cook uncovered over low heat for 5 minutes, stirring often so the rice does not stick to the bottom of the pan.
  4. Stir in the sweetened condensed milk and the raisins and continue to cook gently, stirring frequently, for 8 to 10 minutes until the mixture thickens to a creamy, loose pudding.
  5. Remove the cinnamon stick, stir in the vanilla essence and the ground cinnamon, and take the pan off the heat; the pudding will continue to thicken as it cools.
  6. Spoon the sweet rice into bowls and serve warm, or chill in the refrigerator and serve cold, dusted with a little extra ground cinnamon.
