How to make it
- Rinse the white rice in a sieve under cold water until the water runs clear, then drain well to remove the excess starch.
- Put the rice, water, cinnamon stick and a pinch of salt in a heavy saucepan and bring to a boil, then reduce the heat to low, cover and simmer for about 15 minutes until most of the water is absorbed and the rice is tender.
- Pour in the evaporated milk and stir well, then cook uncovered over low heat for 5 minutes, stirring often so the rice does not stick to the bottom of the pan.
- Stir in the sweetened condensed milk and the raisins and continue to cook gently, stirring frequently, for 8 to 10 minutes until the mixture thickens to a creamy, loose pudding.
- Remove the cinnamon stick, stir in the vanilla essence and the ground cinnamon, and take the pan off the heat; the pudding will continue to thicken as it cools.
- Spoon the sweet rice into bowls and serve warm, or chill in the refrigerator and serve cold, dusted with a little extra ground cinnamon.
