How to make it

  1. Cut the peeled taro into thick finger-shaped pieces, then wrap each piece in a strip of nori, dampening the edge so it sticks, to mimic a fillet of fish.
  2. Steam the wrapped taro pieces over boiling water for about 12 minutes until the taro is tender when pierced, then set aside.
  3. Heat the oil in a wok and fry the chopped ginger, garlic and rinsed black beans over medium heat for about 1 minute until fragrant.
  4. Add the diced green pepper and the white parts of the spring onions and stir-fry for another minute.
  5. Pour in the Shaoxing wine, soy sauce, stock powder and water, and bring the sauce to a simmer.
  6. Slide in the steamed taro pieces and simmer gently for 3 to 4 minutes, spooning the sauce over them so they absorb the flavour.
  7. Stir the cornflour into a little cold water, add it to the wok to thicken the sauce, then scatter over the remaining spring onion greens and serve.
