Tomato Pizza

How to make it
- Place a baking stone or heavy sheet pan in the oven and heat it to the highest setting, usually 250 to 260 C (480 to 500 F), for at least 30 minutes so it is thoroughly hot.
- While the oven heats, stir together the crushed tomatoes, finely grated garlic, 1 tablespoon of the olive oil, the dried chili flakes and a good pinch of salt to make a quick uncooked sauce.
- Tear or dice the mozzarella and set it on paper towels to drain off excess moisture so the finished pizza is not watery.
- Divide the dough into two balls and stretch each one on a floured surface or piece of parchment into a thin round, leaving a slightly thicker rim around the edge.
- Spread a thin, even layer of the tomato sauce over each base, leaving the rim bare, then distribute the mozzarella over the top.
- Slide one pizza, on its parchment, onto the hot stone and bake for 8 to 12 minutes until the crust is puffed and charred in spots and the cheese is bubbling.
- Remove the pizza, immediately shower it with the grated pecorino, drizzle with the remaining olive oil, then repeat with the second pizza and serve hot.
