How to make it

  1. Rinse the tomatoes, remove the cores, and slice them into thin rounds or bite-sized wedges, then arrange them in a wide shallow serving bowl.
  2. Peel the red onions, halve them, and slice them as thinly as you can; if the onion is sharp, soak the slices in cold water for 10 minutes and drain well to mellow the bite.
  3. Peel the garlic clove and grate or very finely mince it, then whisk it together with the olive oil and red wine vinegar to make a quick dressing.
  4. Scatter the onion slices over the tomatoes and pour the dressing evenly across the top.
  5. Season generously with salt and freshly ground black pepper, then gently toss so every piece is coated without crushing the tomatoes.
