How to make it
- Cut the tortillas into thin strips, toss them lightly with a little of the oil, and bake at 200 C (400 F) for 8 to 10 minutes until crisp and golden, then set aside.
- Heat the remaining olive oil in a large pot over medium heat and soften the diced onion for 4 to 5 minutes, then stir in the minced garlic and cumin and cook for 1 minute until fragrant.
- Stir in the tomato paste and cook for a minute, then add the diced tomatoes and chicken stock and bring the soup to a gentle simmer.
- Slip the whole chicken breasts into the simmering broth, cover, and poach for 15 to 18 minutes until cooked through to an internal temperature of 74 C (165 F).
- Remove the chicken, shred it with two forks, and return it to the pot, then season the soup to taste with salt and a squeeze of lime juice.
- Ladle the soup into bowls and top with the crisp tortilla strips and chopped fresh coriander just before serving.
