How to make it

  1. Preheat the oven to 180 C (160 C fan) and line two baking sheets with parchment paper.
  2. Beat the softened butter, brown sugar and caster sugar together with an electric mixer for about 3 minutes until pale and fluffy, then beat in the egg and vanilla until smooth.
  3. Sift the plain flour, cocoa powder, bicarbonate of soda and salt over the bowl, then fold in gently with a spatula until just combined and no dry streaks remain.
  4. Fold through the dark, milk and white chocolate chips, distributing them evenly through the dough.
  5. Scoop heaped tablespoons of dough and roll into balls, then space them well apart on the trays as they spread; chill the trays for 15 minutes if the dough feels very soft.
  6. Bake for 10 to 12 minutes until the edges are set but the centres still look slightly underdone, as they firm up on cooling.
  7. Leave the cookies on the trays for 5 minutes to set, then transfer to a wire rack to cool completely.
