How to make it

  1. Preheat the oven to 200 C / 400 F, scrub the potatoes, prick each one several times with a fork, and bake directly on the rack for about 1 hour until tender all the way through.
  2. Let the potatoes cool just enough to handle, then slice off the top third of each lengthwise and scoop the flesh into a bowl, leaving a sturdy 5 mm shell intact.
  3. Mash the scooped potato with the butter, milk, sour cream, finely diced bell pepper, half of the cheddar and most of the sliced green onions, then season with salt and pepper to taste.
  4. Spoon the filling back into the potato shells, mounding it generously, and arrange them on a baking sheet.
  5. Top each potato with the remaining cheddar and return them to the oven for 15 to 20 minutes until heated through and the cheese is melted and lightly golden.
  6. Scatter the reserved green onions over the top and serve hot.
