How to make it

  1. Soak the stockfish in hot water for about 15 minutes to soften, then debone the smoked fish and break both into bite-sized pieces, rinsing away any grit.
  2. Peel the unripe plantains, cut them into thick rounds or chunks, and place them in a pot with the chopped onion, ground crayfish, ground pepper and seasoning cubes.
  3. Add enough water to just cover the plantains, bring to a boil, then reduce to a simmer and cook covered for about 10 minutes.
  4. Stir in the stockfish and smoked fish and continue simmering for another 10 to 15 minutes, until the plantains are tender and have absorbed the seasoning.
  5. Pour in the palm oil and stir gently so it blends into the porridge, allowing it to cook for 3 to 4 minutes so the raw oil flavor mellows.
  6. Mash a few pieces of plantain against the side of the pot to thicken the porridge to a soft, creamy consistency, adding a splash of water if it gets too dry.
