Unripe Plantain Porridge

How to make it
- Soak the stockfish in hot water for about 15 minutes to soften, then debone the smoked fish and break both into bite-sized pieces, rinsing away any grit.
- Peel the unripe plantains, cut them into thick rounds or chunks, and place them in a pot with the chopped onion, ground crayfish, ground pepper and seasoning cubes.
- Add enough water to just cover the plantains, bring to a boil, then reduce to a simmer and cook covered for about 10 minutes.
- Stir in the stockfish and smoked fish and continue simmering for another 10 to 15 minutes, until the plantains are tender and have absorbed the seasoning.
- Pour in the palm oil and stir gently so it blends into the porridge, allowing it to cook for 3 to 4 minutes so the raw oil flavor mellows.
- Mash a few pieces of plantain against the side of the pot to thicken the porridge to a soft, creamy consistency, adding a splash of water if it gets too dry.
- Taste, adjust the salt and pepper, and serve the porridge hot in bowls.
