How to make it

  1. Sprinkle the gelatin over the cold water in a small bowl and let it stand for 5 minutes to soften, then set the bowl over a pan of barely simmering water and stir until the gelatin is fully dissolved and clear, about 2 minutes.
  2. Finely grate the carrots, cucumber and onion, and finely chop the celery; squeeze the grated vegetables firmly in a clean towel to remove as much liquid as possible so the spread does not turn watery.
  3. In a large bowl, combine the drained vegetables with the mayonnaise and lemon juice, then season with salt and pepper to taste.
  4. Stir the warm dissolved gelatin into the vegetable mixture quickly and evenly, then cover and chill in the refrigerator for about 1 hour until the filling is firm enough to spread.
  5. Trim the crusts from the bread and spread a generous, even layer of the chilled filling over half the slices, then top each with a second slice and press gently.
  6. Cut each sandwich into quarters, triangles or fingers, arrange on a platter, cover with a damp cloth or plastic wrap, and refrigerate until serving so they stay fresh and cool.
