How to make it

  1. Preheat the oven to 200C (400F) and line a baking tray with parchment paper.
  2. Wipe the portobellos clean, twist out the stems and gently scrape away the dark gills with a spoon, then chop the stems finely and set aside.
  3. Whisk 2 tablespoons of the olive oil with the balsamic vinegar, brush it over the mushroom caps inside and out, and arrange them hollow-side up on the tray.
  4. Thaw the frozen spinach and squeeze out as much water as possible, then dice the eggplant into small cubes.
  5. Heat the remaining oil in a pan over medium heat and saute the chopped mushroom stems and eggplant for 5 to 6 minutes until soft, then stir in the spinach, garlic powder, onion powder, salt and pepper and cook for another 2 minutes.
  6. Remove from the heat, fold half of the mozzarella through the vegetable mixture, then spoon it into the mushroom caps and top with the remaining cheese.
  7. Bake for 18 to 20 minutes until the mushrooms are tender and the cheese is melted and golden, then rest for a couple of minutes before serving.
