How to make it

  1. Preheat the oven to 180 C and line a baking sheet with parchment paper.
  2. Cream the softened butter and white granulated sugar together with a wooden spoon or mixer until pale and fluffy, then beat in the egg and vanilla extract until smooth.
  3. In a separate bowl, whisk together the flour, baking soda and salt, then stir this into the butter mixture until just combined.
  4. Fold in the oats and chocolate chips until they are evenly distributed through the dough.
  5. Drop rounded tablespoons of dough onto the prepared sheet, spacing them about 5 cm apart to allow for spreading.
  6. Bake for 10 to 12 minutes until the edges are golden but the centres still look slightly soft, then cool on the sheet for 5 minutes before moving to a rack.
