How to make it
- Preheat the oven to 180 C (350 F) and grease and line the bases of two 20 cm round sandwich tins with baking parchment.
- Cream the softened butter and caster sugar together with an electric mixer for several minutes until the mixture is pale, light, and fluffy.
- Beat in the eggs one at a time, adding a spoonful of the flour with each to prevent the batter from curdling, then mix in the vanilla essence.
- Sift in the remaining self-raising flour and baking powder and fold them in gently with a spatula until just combined, keeping as much air in the batter as possible.
- Divide the batter evenly between the two tins, level the tops, and bake for 20 to 25 minutes until risen, golden, and springy to the touch, and a skewer inserted in the centre comes out clean.
- Let the cakes cool in their tins for 5 minutes, then turn them out onto a wire rack and leave until completely cold.
- Spread one cake with raspberry jam and top with the whipped cream, set the second cake on top, and finish with a light dusting of icing sugar before serving.
