How to make it
- Preheat your waffle iron and lightly brush or spray it with oil so the waffles release cleanly.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
- In a separate bowl, beat the eggs, then whisk in the milk, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir just until combined; a few small lumps are fine, as overmixing will make the waffles tough.
- Ladle enough batter to cover most of the iron's surface, close the lid, and cook for 4 to 5 minutes until the waffles are golden brown and crisp and no steam escapes.
- Carefully lift out each waffle and serve immediately, or keep warm in a low oven on a wire rack so they stay crisp while you cook the rest.
