How to make it
- Toast the walnuts in a dry skillet over medium heat for 4 to 5 minutes, stirring often, until fragrant, then tip them onto a plate to cool.
- Core both apples and cut them into bite-sized cubes, leaving the skin on for colour, and toss them immediately with the lemon juice in a large bowl to keep them from browning.
- Trim and thinly slice the celery on a slight angle, then add it to the apples along with the raisins.
- In a small bowl, stir together the mayonnaise, sugar, and a pinch of salt until smooth and well blended.
- Pour the dressing over the apple mixture and fold gently until everything is evenly coated.
- Add the cooled toasted walnuts and fold them through, reserving a few to scatter on top.
- Cover and chill the salad for at least 30 minutes before serving so the flavours meld, then taste and adjust the salt if needed.
