Whole Wheat Pancakes

How to make it
- In a large bowl, whisk together the whole wheat flour, sugar, baking powder and salt until evenly combined.
- In a separate bowl, beat the egg, then whisk in the milk and the 3 tablespoons of oil until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently just until no dry flour remains; a few small lumps are fine, and overmixing will make the pancakes tough.
- Let the batter rest for 5 to 10 minutes so the whole wheat flour can absorb the liquid and the baking powder can activate.
- Heat a lightly oiled skillet or griddle over medium heat until a drop of water sizzles on contact.
- Pour about 1/4 cup of batter per pancake onto the hot surface and cook until bubbles form across the top and the edges look set, about 2 to 3 minutes.
- Flip and cook the second side for another 1 to 2 minutes until golden brown and cooked through, then repeat with the remaining batter, oiling the pan as needed, and serve warm.
