Wonton Soup

How to make it
- Make the filling by mixing the ground pork with the grated ginger, the white parts of the spring onions finely chopped, 1 tablespoon of the soy sauce, the sesame oil, cornstarch and a pinch of salt until well combined and slightly sticky.
- Place a teaspoon of filling in the centre of each wonton wrapper, brush the edges with water, fold into a triangle pressing out any air, then bring the two bottom corners together and pinch to seal.
- Bring the chicken broth to a gentle simmer in a large pot, stir in the remaining 2 tablespoons of soy sauce, and taste for seasoning.
- Bring a separate pot of water to a boil, drop in the wontons in batches, and cook for 4 to 5 minutes until they float and the pork is cooked through to 71 C (160 F); lift them out with a slotted spoon.
- Add the chopped bok choy to the simmering broth and cook for 2 to 3 minutes until the stems are just tender and the leaves wilted.
- Divide the cooked wontons among four bowls and ladle the hot broth and bok choy over them.
- Scatter the sliced green parts of the spring onions over the top and serve immediately while piping hot.
