How to make it

  1. Make the filling by mixing the ground pork with the grated ginger, the white parts of the spring onions finely chopped, 1 tablespoon of the soy sauce, the sesame oil, cornstarch and a pinch of salt until well combined and slightly sticky.
  2. Place a teaspoon of filling in the centre of each wonton wrapper, brush the edges with water, fold into a triangle pressing out any air, then bring the two bottom corners together and pinch to seal.
  3. Bring the chicken broth to a gentle simmer in a large pot, stir in the remaining 2 tablespoons of soy sauce, and taste for seasoning.
  4. Bring a separate pot of water to a boil, drop in the wontons in batches, and cook for 4 to 5 minutes until they float and the pork is cooked through to 71 C (160 F); lift them out with a slotted spoon.
  5. Add the chopped bok choy to the simmering broth and cook for 2 to 3 minutes until the stems are just tender and the leaves wilted.
  6. Divide the cooked wontons among four bowls and ladle the hot broth and bok choy over them.
  7. Scatter the sliced green parts of the spring onions over the top and serve immediately while piping hot.
