Yogi Tea

How to make it
- Lightly crush the peppercorns, cloves and cardamom pods with the flat of a knife or a pestle to release their oils.
- Pour the water into a saucepan, add the crushed spices, the cinnamon stick and the slices of fresh ginger, and bring to a boil.
- Reduce the heat and simmer gently, uncovered, for about 15 to 20 minutes so the spices infuse and the liquid takes on colour and aroma.
- Add the black tea and let it steep for 1 to 2 minutes, no longer, so the brew does not turn bitter.
- Pour in the milk and bring the tea back up to just below a boil, stirring, then immediately remove from the heat.
- Strain the tea through a fine sieve into mugs to remove all the spices and tea leaves.
- Sweeten with honey to taste and serve hot.
