How to make it
- Preheat the oven to 175 C (350 F) and grease and flour a standard loaf pan, or line it with parchment paper.
- Grate the zucchini on the large holes of a box grater, then gently squeeze out and discard excess moisture with a clean towel.
- In a large bowl, whisk together the eggs, oil, sugar and vanilla until well blended and slightly lightened.
- In a separate bowl, whisk together the flour, cinnamon, baking soda, baking powder and salt.
- Add the dry ingredients to the wet ingredients and stir just until combined, then fold in the grated zucchini, being careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes, until the top is golden and a toothpick inserted into the center comes out clean, then cool in the pan for 10 minutes before turning out onto a rack to finish cooling.
