Almond Cake

How to make it
- Preheat the oven to 175 C / 350 F and grease and line a 20 cm round cake tin with parchment paper.
- Beat the softened butter and granulated sugar together with an electric mixer for 3 to 4 minutes until pale and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla and almond extracts until smooth.
- Whisk together the flour, ground almonds, baking powder and salt, then fold the dry ingredients into the batter in two additions until just combined without overmixing.
- Spoon the batter into the prepared tin, level the top with a spatula and scatter the flaked almonds evenly over the surface.
- Bake for 35 to 40 minutes until golden and a skewer inserted into the centre comes out clean, then cool in the tin for 10 minutes.
- Turn the cake out onto a wire rack to cool completely, then dust generously with powdered sugar before slicing and serving.
