How to make it
- Whisk the flour, sugar, baking powder, baking soda, and salt together in a large mixing bowl until well blended.
- In another bowl, beat the egg and then whisk in the buttermilk, milk, melted butter, and almond extract until the mixture is smooth.
- Add the wet ingredients to the dry ingredients and fold together with just a few gentle strokes, leaving the batter slightly lumpy to keep the pancakes tender.
- Stir in half of the sliced almonds and let the batter rest for about 5 minutes while you heat the pan.
- Warm a nonstick griddle or skillet over medium heat and lightly grease it; test the heat with a drop of water, which should sizzle on contact.
- Ladle about 1/4 cup of batter per pancake and scatter a few of the remaining almonds over each one, cooking until bubbles break the surface and the edges set, about 2 to 3 minutes.
- Flip the pancakes and cook until the second side is golden and the centers are fully cooked, about 1 to 2 minutes more, then serve warm with maple syrup or honey.
