How to make it
- Preheat the oven to 190°C and lightly butter a square baking dish.
- Arrange the sliced apples in an even layer in the prepared dish, sprinkling them with about half the cinnamon as you go.
- In a bowl, combine the flour, rolled oats, brown sugar, salt, and remaining cinnamon, stirring to break up any lumps of sugar.
- Add the cold cubed butter and cut it into the dry mixture with a pastry blender or your fingertips until the topping forms coarse, pea-sized crumbs.
- Scatter the crumb topping evenly over the apples, covering them completely without packing it down.
- Bake for 40 to 45 minutes, until the topping is golden brown and the apple juices bubble up around the edges; if the top browns too fast, loosely tent it with foil.
- Let the crisp cool for at least 10 minutes so the filling sets slightly, then serve warm, ideally with a scoop of vanilla ice cream.
