How to make it

  1. Preheat the oven to 190°C and lightly butter a square baking dish.
  2. Arrange the sliced apples in an even layer in the prepared dish, sprinkling them with about half the cinnamon as you go.
  3. In a bowl, combine the flour, rolled oats, brown sugar, salt, and remaining cinnamon, stirring to break up any lumps of sugar.
  4. Add the cold cubed butter and cut it into the dry mixture with a pastry blender or your fingertips until the topping forms coarse, pea-sized crumbs.
  5. Scatter the crumb topping evenly over the apples, covering them completely without packing it down.
  6. Bake for 40 to 45 minutes, until the topping is golden brown and the apple juices bubble up around the edges; if the top browns too fast, loosely tent it with foil.
  7. Let the crisp cool for at least 10 minutes so the filling sets slightly, then serve warm, ideally with a scoop of vanilla ice cream.
