How to make it
- Preheat the oven to 190 C and line a muffin tin with eight paper cases, since this batter yields about eight muffins to serve four generously.
- Make the streusel by rubbing together the brown sugar, 1/4 cup of the flour, half the cinnamon and 2 tablespoons of the cold butter with your fingertips until crumbly, then set aside.
- In a large bowl whisk together the remaining flour, white sugar, baking powder, remaining cinnamon and salt until evenly combined.
- Melt the remaining butter and whisk it in a separate bowl with the egg and milk until smooth, then peel and finely dice the apple.
- Pour the wet ingredients into the dry and stir just until no dry flour remains, then gently fold in the diced apple, taking care not to overmix or the muffins will turn tough.
- Divide the batter among the cases until about two-thirds full, then scatter the streusel topping generously over each muffin.
- Bake for 18 to 22 minutes until risen and golden and a skewer inserted into the centre comes out clean, then cool in the tin for 5 minutes before transferring to a rack.
