How to make it

  1. Preheat a sandwich press, panini grill or the oven to 200 C (400 F) and split each bagel in half horizontally through the middle.
  2. Spread the soft white cheese evenly over all the cut bagel halves, then dot or streak a little ketchup over the bottom halves.
  3. Pit and slice the green olives, thinly slice the tomato and red onion, and drain the sweetcorn well so the toast does not turn soggy.
  4. Lay a slice of yellow cheese on each bottom half, then arrange the tomato, onion, olives and sweetcorn on top and season lightly with salt, pepper and oregano.
  5. Cap each one with its top half, cut side down, pressing gently so the fillings hold together.
  6. Toast in the press for 4 to 5 minutes, or bake in the oven for 8 to 10 minutes, until the bagels are golden and crisp and the cheese has fully melted.
  7. Let the bagel toasts rest for a minute so the molten cheese sets slightly, then cut in half and serve hot.
