How to make it

  1. Preheat the oven to 175 C (350 F) and grease and line a 20 cm square or round cake tin.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt and cinnamon, then set aside.
  3. In a large bowl, beat the softened butter and sugar together until pale and fluffy, about 3 minutes, then beat in the eggs one at a time followed by the vanilla.
  4. Stir in the mashed bananas and yogurt until combined, then gently fold in the dry ingredients just until no streaks of flour remain, taking care not to overmix.
  5. Pour the batter into the prepared tin and smooth the top with a spatula.
  6. Bake for 35 to 45 minutes, until the cake is golden and a skewer inserted into the center comes out clean.
  7. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
