How to make it
- Preheat the oven and bake the cinnamon rolls according to the package directions until golden, then set aside to cool slightly and reserve the icing.
- Peel the bananas and slice them about 1/2 inch thick on the diagonal.
- Melt the butter in a skillet over medium heat, stir in the brown sugar and cinnamon, and cook for 1 minute until bubbling and smooth.
- Add the banana slices and cook gently for 2 to 3 minutes, turning once, until they soften and glaze without falling apart, then stir in the vanilla.
- Tear or cut the warm cinnamon rolls into bite-sized pieces and divide them among four bowls.
- Spoon the caramelized bananas and their syrup over the rolls, then drizzle generously with caramel sauce and a little of the reserved icing.
- Top each bowl with a scoop of vanilla ice cream and serve immediately while warm.
