How to make it
- Preheat the oven to 175 C and grease and line a 23 by 13 cm loaf tin with parchment paper so the bread lifts out easily.
- Roughly chop the pecans and toast them in a dry pan over medium heat for 4 to 5 minutes until fragrant, then set aside to cool, reserving a small handful for the top.
- In a bowl, whisk together the flour, baking powder and salt. In a separate large bowl, cream the softened butter and sugar with an electric mixer until pale and fluffy.
- Beat in the eggs one at a time, then add the vanilla. Mash the bananas with the lemon juice and stir them into the wet mixture until well combined.
- Fold the dry ingredients into the wet ingredients just until no streaks of flour remain, then gently fold in the toasted pecans, being careful not to overmix or the bread will turn dense.
- Scrape the batter into the prepared tin, smooth the top, and scatter over the reserved pecans. Bake for 55 to 65 minutes until risen, golden, and a skewer inserted in the center comes out clean.
- Let the loaf cool in the tin for 10 minutes, then turn it out onto a wire rack to cool completely before slicing.
