How to make it

  1. Pat the brisket dry, then whisk together the Worcestershire sauce, honey, and Dijon mustard and brush it all over the meat as a binder.
  2. Coat the brisket evenly on all sides with the barbecue dry rub, pressing it in, then let it sit at room temperature for about 30 minutes while you prepare the grill or smoker.
  3. Set up the grill for low indirect heat at around 110 to 120C (225 to 250F) and add the soaked mesquite chunks to the coals or smoker box for smoke.
  4. Place the brisket fat side up on the cool side of the grill, cover, and smoke low and slow, maintaining temperature and adding more mesquite as needed, for roughly 6 to 8 hours.
  5. Cook until the internal temperature reaches at least 90 to 96C (195 to 205F) and the meat is fork-tender, wrapping it in foil partway through if the bark darkens too quickly.
  6. Rest the brisket wrapped and loosely tented for at least 30 minutes, then slice against the grain or pull it into chunks and season with a little salt to taste.
  7. Pile the warm sliced or pulled brisket onto the hamburger buns and serve, with extra barbecue sauce on the side if you like.
