How to make it

  1. Crack the eggs into a bowl, add the milk and a pinch of salt, then whisk thoroughly until the yolks and whites are fully blended and slightly frothy.
  2. Place a non-stick skillet over medium-low heat and melt the butter, swirling it to coat the base evenly without letting it brown.
  3. Pour in the egg mixture and let it sit undisturbed for about 20 seconds until the edges just begin to set.
  4. Using a silicone spatula, gently push the eggs from the edges toward the centre, folding the cooked curds over and tilting the pan so the raw egg flows underneath.
  5. Continue folding slowly for 2 to 3 minutes, keeping the heat gentle so the curds stay soft and glossy rather than dry.
  6. Remove the pan from the heat while the eggs are still slightly moist but no longer runny, as residual heat will finish cooking them to a safe, firm set without overcooking.
  7. Season with black pepper and a little more salt if needed, scatter the chives over the top, and serve immediately.
