How to make it

  1. Heat 1 tablespoon of the oil in a small pan and gently fry half of the chopped onion until soft and golden, then let it cool slightly.
  2. In a bowl, combine the ground beef with the cooked onion, the egg, salt, and pepper, mixing gently with your hands until just bound together.
  3. Divide the mixture into four equal portions and shape each into a patty slightly wider than the buns, pressing a shallow dimple into the centre of each.
  4. Heat the remaining oil in a frying pan or griddle over medium-high heat until hot.
  5. Cook the patties for about 4 to 5 minutes per side, until well browned and cooked through to an internal temperature of at least 71 C (160 F).
  6. Lay a slice of cheese on each patty during the final minute so it melts, then remove from the heat.
  7. Lightly toast the buns, then build each burger with lettuce, tomato, the cheesy patty, a scatter of the remaining raw onion, and a spoon of ketchup before topping with the bun lid.
