Beef Curry

How to make it
- Heat the vegetable oil in a large pan over medium heat and soften the finely chopped onion and minced garlic for about 5 minutes until translucent.
- Add the minced beef, breaking it up with a spoon, and cook for 6 to 8 minutes until it is well browned with no pink remaining.
- Stir in the curry powder and cook for 1 minute to bloom the spices, then add the tomato puree and stir to coat the meat.
- Crumble in the beef stock cube, pour in 400 ml of the water, bring to a gentle simmer, and cook uncovered for 20 minutes until the sauce thickens, adding a splash more water if it gets too dry.
- Meanwhile, rinse the rice, combine it with the remaining 300 ml water and a pinch of salt, bring to a boil, then cover and cook on low for 12 to 15 minutes until tender and the water is absorbed.
- Squeeze the lemon juice into the curry, taste, and adjust the salt to balance the flavor.
- Fluff the rice with a fork and serve the beef curry spooned alongside or on top.
