How to make it

  1. Heat the vegetable oil in a large pan over medium heat and soften the finely chopped onion and minced garlic for about 5 minutes until translucent.
  2. Add the minced beef, breaking it up with a spoon, and cook for 6 to 8 minutes until it is well browned with no pink remaining.
  3. Stir in the curry powder and cook for 1 minute to bloom the spices, then add the tomato puree and stir to coat the meat.
  4. Crumble in the beef stock cube, pour in 400 ml of the water, bring to a gentle simmer, and cook uncovered for 20 minutes until the sauce thickens, adding a splash more water if it gets too dry.
  5. Meanwhile, rinse the rice, combine it with the remaining 300 ml water and a pinch of salt, bring to a boil, then cover and cook on low for 12 to 15 minutes until tender and the water is absorbed.
  6. Squeeze the lemon juice into the curry, taste, and adjust the salt to balance the flavor.
  7. Fluff the rice with a fork and serve the beef curry spooned alongside or on top.
