How to make it
- Trim all visible fat from the beef, as fat goes rancid, then freeze it for 30 to 60 minutes so it firms up for slicing.
- Slice the beef as thinly as possible, about 3 to 5 mm thick, cutting against the grain for tender jerky or with the grain for chewier jerky.
- In a bowl, whisk together the soy sauce, brown sugar, liquid smoke, minced garlic, salt and black pepper to make the marinade.
- Add the beef strips, toss to coat every piece, then cover and refrigerate for at least 6 hours or overnight, turning once.
- Lift the strips out, pat them dry, and lay them in a single layer without touching on dehydrator trays or on racks set over baking sheets.
- Dehydrate at 70 C, or dry in an oven set to its lowest setting with the door slightly ajar, for 4 to 6 hours until the meat is dry and leathery and bends without snapping.
- For food safety, heat oven-dried strips to an internal 71 C either before or after drying, then cool completely and store in an airtight container.
