How to make it

  1. Warm half of the milk to about 38 C, stir in the yeast and a pinch of the sugar, and let it stand for 10 minutes until foamy.
  2. Separate the eggs, then whisk the yolks with the remaining sugar and salt while reserving the whites in a clean bowl.
  3. Melt the butter and let it cool slightly, then whisk it with the egg yolk mixture and the remaining milk.
  4. Stir the yeast mixture into the wet ingredients, then gradually sift in the flour and whisk to a smooth, lump-free batter; cover and let it rise in a warm place for about 1 hour until bubbly.
  5. Beat the egg whites to soft peaks and gently fold them into the rested batter to keep it light.
  6. Heat a lightly oiled non-stick pan over medium heat, pour in small ladles of batter, and cook each bliny for about 2 minutes until bubbles form and the edges set.
  7. Flip and cook the other side for 1 to 2 minutes until golden, then stack and keep warm, serving with sour cream or jam.
