How to make it
- Preheat the oven to 200 C (400 F) and line a muffin tin with paper liners or grease it well; this recipe makes about 8 muffins, two per serving.
- In a large bowl, whisk together the flour, sugar, baking powder and salt until evenly combined.
- In a separate bowl, beat the egg lightly, then whisk in the milk, oil and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and fold gently with a spatula just until no dry streaks remain; do not overmix or the muffins will turn tough.
- Toss the blueberries with a teaspoon of the flour mixture to keep them suspended, then fold them in carefully so they do not break and bleed into the batter.
- Divide the batter evenly among the cups, filling each about three-quarters full, and if you like sprinkle a little extra sugar on top for a crisp crust.
- Bake for 18 to 22 minutes until the tops are golden and a toothpick inserted into the center comes out clean, then cool in the tin for 5 minutes before transferring to a rack.
