How to make it

  1. In a large bowl, whisk together the flour, sugar, baking soda, cream of tartar, salt, cinnamon, and nutmeg.
  2. In a separate bowl, beat the egg, then whisk in the milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined, leaving the batter slightly lumpy rather than overmixing it.
  4. Gently fold in the blueberries, taking care not to crush them.
  5. Heat a lightly greased griddle or nonstick skillet over medium heat until a few drops of water sizzle and dance across the surface.
  6. Ladle about 1/4 cup of batter per pancake onto the griddle and cook for 2 to 3 minutes until bubbles form across the surface and the edges look set.
  7. Flip each pancake and cook for another 1 to 2 minutes until golden brown and cooked through, then serve warm with maple syrup.
