How to make it
- Preheat the oven to 175 C (350 F) and line two baking trays with parchment paper.
- Cream the softened butter and brown sugar together until light and fluffy, then beat in the egg and molasses until smooth.
- In a separate bowl, whisk together the flour, baking soda, ground ginger, cinnamon and salt, then gradually stir the dry ingredients into the wet mixture to form a soft dough.
- Roll the dough into walnut-sized balls, then roll each ball in the white sugar to coat.
- Place the balls on the trays spaced well apart, as they will spread, and flatten each one only very slightly.
- Bake for 9 to 11 minutes, until the tops are cracked and the edges set but the centres still look soft, being careful not to overbake so they stay chewy.
- Let the cookies cool on the tray for 5 minutes to firm up, then transfer to a wire rack to cool completely.
