How to make it
- Warm the olive oil in a large pot over medium heat and cook the chopped onions for about 6 minutes until soft and translucent.
- Add the minced garlic, diced green bell pepper and chopped green chile and cook for a further 2 minutes until fragrant.
- Stir in the cumin and smoked paprika and toast for 30 seconds, then add the chopped tomatoes and cook for 8 to 10 minutes until they break down into a thick sauce.
- Add the diced zucchini and the cooked chickpeas, stirring to coat them in the tomato base.
- Pour in the vegetable broth, season with salt and pepper, and bring to a simmer.
- Cook gently uncovered for 20 to 25 minutes, stirring occasionally, until the zucchini is tender and the stew has thickened.
- Taste and adjust the seasoning, then stir through the chopped parsley and serve hot with crusty bread or rice.
