How to make it

  1. Warm the olive oil in a large pot over medium heat and cook the chopped onions for about 6 minutes until soft and translucent.
  2. Add the minced garlic, diced green bell pepper and chopped green chile and cook for a further 2 minutes until fragrant.
  3. Stir in the cumin and smoked paprika and toast for 30 seconds, then add the chopped tomatoes and cook for 8 to 10 minutes until they break down into a thick sauce.
  4. Add the diced zucchini and the cooked chickpeas, stirring to coat them in the tomato base.
  5. Pour in the vegetable broth, season with salt and pepper, and bring to a simmer.
  6. Cook gently uncovered for 20 to 25 minutes, stirring occasionally, until the zucchini is tender and the stew has thickened.
  7. Taste and adjust the seasoning, then stir through the chopped parsley and serve hot with crusty bread or rice.
