How to make it
- Break up the cold rice with wet hands so there are no clumps, and beat the eggs with a pinch of salt in a separate bowl.
- Heat 2 tbsp oil in a wok over high heat until shimmering, pour in the eggs and scramble for 30 to 45 seconds until just set and fully cooked but still soft, then scoop them out.
- Add the remaining oil and the white parts of the scallions, stir for 20 seconds, then tip in the rice and peas and toss constantly for 3 to 4 minutes until the grains are hot and bouncing freely in the pan.
- Drizzle the soy sauce around the edge of the wok so it sizzles, then fold it through the rice with the white pepper until evenly colored.
- Return the egg to the wok, breaking it into small curds, and stir-fry for another minute until everything is steaming and slightly toasted.
- Finish with the sesame oil and the green scallion tops, toss once more, and serve immediately.
