How to make it
- Peel the cucumber and slice it thinly, then lay the slices on paper towels and lightly salt them; let them sit for 5 minutes and pat dry to remove excess moisture so the sandwich stays crisp.
- In a small bowl, whisk the olive oil and red wine vinegar with a pinch of salt and pepper to make a quick dressing, then toss the alfalfa sprouts in just enough of it to coat lightly.
- Spread a generous, even layer of softened cream cheese over one side of all eight slices of bread.
- On four of the slices, arrange a layer of cucumber, then the tomato slices, and season the tomato with a little salt and black pepper.
- Top the tomato with the dressed sprouts and a romaine leaf, folding the lettuce to fit neatly within the bread.
- Close each sandwich with a second slice, cream-cheese side down, press gently, and slice in half on the diagonal before serving.
