How to make it

  1. Preheat the oven to 180 C (350 F) and line two baking sheets with parchment paper.
  2. Beat the softened butter with the white and brown sugars for 2 to 3 minutes until light and creamy, then beat in the egg and vanilla until fully combined.
  3. In a separate bowl whisk together the all-purpose flour, oat flour, baking soda, and salt.
  4. Add the dry ingredients to the butter mixture and mix on low speed just until no streaks of flour remain, then fold in the chocolate chips.
  5. Roll the dough into walnut-sized balls, about 2 tablespoons each, and space them at least 5 cm apart on the trays, leaving them rounded rather than flattening them.
  6. Bake for 11 to 13 minutes, until the edges are set and lightly golden but the centres still look soft and slightly underdone.
  7. Let the balls cool on the tray for 5 minutes so they firm up, then transfer to a wire rack to cool completely.
