How to make it

  1. Gently melt the unsweetened chocolate in a heatproof bowl set over barely simmering water, then let it cool slightly.
  2. In a large bowl, whisk together the vegetable oil, granulated sugar, and the cooled melted chocolate until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract until the batter is glossy and well combined.
  4. Sift together the flour, baking powder, and salt, then fold the dry ingredients into the chocolate mixture until a soft sticky dough forms.
  5. Cover the dough and refrigerate for at least 3 hours, or overnight, so it firms up enough to roll into balls.
  6. Preheat the oven to 180 C (350 F) and line baking sheets with parchment, then roll the chilled dough into walnut-sized balls.
  7. Roll each ball generously in the confectioners sugar to coat, and place them about 5 cm apart on the baking sheets.
  8. Bake for 10 to 12 minutes until the cookies have spread and cracked on top but the centers are still soft, then cool on the sheet for 5 minutes before transferring to a rack.
