How to make it
- Line two baking trays with parchment paper and set them aside so you can drop the cookies quickly once the mixture is ready.
- In a medium saucepan combine the sugar, butter, milk and cocoa powder, then place over medium heat and stir until the butter melts and everything is smooth.
- Bring the mixture to a rolling boil and let it bubble hard for exactly 1 minute without stirring, then remove the pan from the heat.
- Immediately stir in the vanilla, salt, oats and shredded coconut until every flake is evenly coated and the mixture begins to thicken.
- Working fast before it sets, drop heaping tablespoons of the mixture onto the lined trays, spacing them slightly apart.
- Let the macaroons cool at room temperature for about 30 minutes until firm, or refrigerate for 15 minutes to speed it up, then serve.
