How to make it

  1. Line two baking trays with parchment paper and set them aside so you can drop the cookies quickly once the mixture is ready.
  2. In a medium saucepan combine the sugar, butter, milk and cocoa powder, then place over medium heat and stir until the butter melts and everything is smooth.
  3. Bring the mixture to a rolling boil and let it bubble hard for exactly 1 minute without stirring, then remove the pan from the heat.
  4. Immediately stir in the vanilla, salt, oats and shredded coconut until every flake is evenly coated and the mixture begins to thicken.
  5. Working fast before it sets, drop heaping tablespoons of the mixture onto the lined trays, spacing them slightly apart.
  6. Let the macaroons cool at room temperature for about 30 minutes until firm, or refrigerate for 15 minutes to speed it up, then serve.
