How to make it

  1. Preheat the oven to 175 C (350 F) and line or grease an 8-inch square baking pan.
  2. In a large bowl, cream the softened margarine with the brown sugar until light and fluffy, then beat in the egg and vanilla until smooth.
  3. In a separate bowl, whisk together the flour, rolled oats, baking soda, and salt.
  4. Gradually stir the dry ingredients into the wet mixture until a thick, even dough forms, then fold in about two-thirds of the chocolate chips.
  5. Press the dough evenly into the prepared pan and scatter the remaining chocolate chips over the top, pressing them in lightly.
  6. Bake for 20 to 25 minutes until the edges are golden and the center is set but still slightly soft to the touch.
  7. Let the slab cool completely in the pan before cutting into squares so they hold their shape cleanly.
