Churros II

How to make it
- In a saucepan, combine the water, milk, butter, salt and sugar and bring to a gentle boil over medium heat until the butter has fully melted.
- Remove from the heat, add all the flour at once, and stir vigorously with a wooden spoon until the mixture forms a smooth ball that pulls away from the sides of the pan.
- Let the dough cool for about 5 minutes, then beat in the eggs one at a time followed by the vanilla, mixing until the dough is smooth, thick and glossy.
- Transfer the dough to a piping bag fitted with a large star tip and stir together the coating sugar and cinnamon on a shallow plate.
- Heat the oil in a deep, heavy pot to 180 C (360 F), then pipe 10 to 12 cm lengths of dough directly into the oil, cutting them off with scissors and frying only a few at a time.
- Fry for 2 to 3 minutes per batch, turning, until deep golden brown and cooked through, then lift out with a slotted spoon and drain on paper towels.
- While still warm, roll the churros in the cinnamon sugar to coat and serve right away.
