How to make it

  1. Preheat the oven to 220 C (425 F) and grease an 8-inch square baking pan or a similar ovenproof dish.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder and salt until evenly combined.
  3. Melt the shortening gently and let it cool slightly, then in a separate bowl beat the egg and whisk in the milk and melted shortening.
  4. Pour the wet ingredients into the dry ingredients and stir just until the batter comes together; a few small lumps are fine, and do not overmix or the cornbread will turn tough.
  5. Scrape the batter into the prepared pan and spread it level with a spatula.
  6. Bake for 20 to 25 minutes, until the top is golden and a toothpick inserted in the center comes out clean.
  7. Let the cornbread cool in the pan for about 10 minutes, then cut into squares and serve warm.
