How to make it

  1. In a medium bowl, whisk together the plain flour, ground ginger, cinnamon, baking soda and salt, then set aside.
  2. In a large bowl, beat the softened butter with the brown sugar until light and fluffy, about 2 to 3 minutes, then beat in the molasses and the egg until fully combined.
  3. Add the dry ingredients to the wet mixture and stir just until a stiff dough forms, taking care not to overmix.
  4. Gather the dough into a disc, wrap it well, and chill in the refrigerator for at least 1 hour so it firms up and rolls out cleanly.
  5. Preheat the oven to 175 C and line two baking sheets with parchment paper. Roll the chilled dough out on a lightly floured surface to about 3 mm thick for cookies that bake up thin and crisp.
  6. Cut out shapes with a cutter, transfer them to the lined sheets spaced 3 cm apart, and bake for 9 to 11 minutes until the edges are set and slightly darkened.
  7. Let the cookies cool on the sheet for 5 minutes to crisp up, then transfer to a wire rack to cool completely before decorating or storing.
