How to make it

  1. In a bowl, whisk together the flour, baking powder, ground nutmeg and salt and set aside.
  2. Cream the softened butter with the sugar until light, then beat in the eggs one at a time until smooth.
  3. Add the dry ingredients to the creamed mixture alternately with the milk, mixing just until a soft dough forms, then chill it for 30 minutes to firm up.
  4. Roll the dough out on a floured surface to about 1cm thick, cut it into strips roughly 12cm long, and twist each strip a few times before pinching the ends together.
  5. Heat the oil in a deep heavy pan to 180C (360F), checking the temperature carefully as accurate heat keeps the crullers from absorbing grease.
  6. Fry the twisted crullers a few at a time for 2 to 3 minutes, turning once, until they are puffed and golden brown all over.
  7. Lift them out with a slotted spoon and drain on paper towels, then dust with sugar while still warm and serve.
