Double Hamburgers

How to make it
- Put the minced beef in a bowl with the onion powder, garlic powder, smoked paprika and Worcestershire sauce, season well with salt and pepper, and mix gently with your hands just until combined; overworking makes the patties tough.
- Divide the mixture into 8 equal portions and shape each into a thin patty slightly wider than the buns, pressing a shallow dimple into the centre of each so they stay flat as they cook.
- Heat the oil in a heavy frying pan or griddle over medium-high heat until very hot.
- Cook the patties for about 3 minutes on the first side, flip, lay a slice of cheddar on each, and cook a further 2 to 3 minutes until the cheese melts and the beef reaches an internal temperature of 71 C with no pink remaining.
- Meanwhile, slice the buns and toast them cut-side down in the pan for about a minute until lightly golden.
- Build each burger by stacking two cheese-topped patties on the bun base for the double, then add lettuce, sliced tomato and thinly sliced red onion.
- Cap with the bun lid, press gently, and serve straight away while hot.
