How to make it

  1. Put the minced beef in a bowl with the onion powder, garlic powder, smoked paprika and Worcestershire sauce, season well with salt and pepper, and mix gently with your hands just until combined; overworking makes the patties tough.
  2. Divide the mixture into 8 equal portions and shape each into a thin patty slightly wider than the buns, pressing a shallow dimple into the centre of each so they stay flat as they cook.
  3. Heat the oil in a heavy frying pan or griddle over medium-high heat until very hot.
  4. Cook the patties for about 3 minutes on the first side, flip, lay a slice of cheddar on each, and cook a further 2 to 3 minutes until the cheese melts and the beef reaches an internal temperature of 71 C with no pink remaining.
  5. Meanwhile, slice the buns and toast them cut-side down in the pan for about a minute until lightly golden.
  6. Build each burger by stacking two cheese-topped patties on the bun base for the double, then add lettuce, sliced tomato and thinly sliced red onion.
  7. Cap with the bun lid, press gently, and serve straight away while hot.
