How to make it

  1. Finely dice the onion, carrots and celery, and mince the garlic. Cut the chicken breasts into bite-sized pieces.
  2. Melt the butter with the olive oil in a large pot over medium heat, then add the onion, carrots and celery and cook for 6 to 8 minutes until softened. Stir in the garlic, thyme and basil and cook for another minute until fragrant.
  3. Sprinkle the flour over the vegetables and stir constantly for about 1 minute to cook out the raw taste and form a light roux.
  4. Gradually pour in the chicken stock while stirring to keep the mixture smooth, then add the chicken pieces and bring to a gentle boil.
  5. Reduce the heat and simmer for 12 to 15 minutes, until the chicken is cooked through and reaches an internal temperature of 74 C (165 F) with no pink remaining.
  6. Add the egg noodles and simmer for a further 8 to 10 minutes until tender.
  7. Season to taste with salt and pepper, stir through the chopped parsley, and serve hot.
