How to make it

  1. In a large bowl mix the flour, yeast and lukewarm water until no dry patches remain, then cover and rest for 20 minutes so the flour fully hydrates.
  2. Sprinkle the salt over the dough and work it in, then stretch and fold the dough over itself several times in the bowl; cover and let it rise at room temperature for about 1.5 to 2 hours, folding once or twice, until roughly doubled.
  3. Turn the dough onto a lightly floured surface, divide into 3 equal pieces, gently pre-shape each into a loose log, and rest covered for 15 minutes.
  4. Shape each piece into a long thin baguette by folding and rolling, sealing the seam, then place seam-side down on a floured couche or parchment, cover, and proof for 45 to 60 minutes until puffy.
  5. Meanwhile place a baking stone or heavy tray in the oven with a metal pan on the bottom and preheat to 250C; just before baking, slash each loaf with 3 to 4 diagonal cuts using a sharp blade.
  6. Slide the loaves into the oven, pour a cup of hot water into the bottom pan to create steam, and bake for 20 to 25 minutes until deep golden and hollow-sounding when tapped, then cool on a rack before slicing.
