How to make it

  1. Tear the day-old bread into pieces, place it in a bowl, and moisten it with a little cold water, then let it soak for about 10 minutes until softened.
  2. Core and roughly chop the tomatoes, and roughly chop the green pepper, cucumber, onion, and garlic.
  3. Combine the soaked bread, tomatoes, pepper, cucumber, onion, and garlic in a blender along with the salt and vinegar.
  4. Blend on high until the mixture is broken down, then, with the blender running, slowly drizzle in the olive oil so the soup emulsifies and turns smooth and slightly creamy.
  5. Add the cold water a little at a time, blending until you reach a pourable, velvety consistency, then taste and adjust the salt and vinegar.
  6. For the silkiest texture, pass the gazpacho through a fine sieve to remove any skins and seeds.
  7. Chill the gazpacho in the refrigerator for at least 2 hours, then serve very cold with a drizzle of olive oil and finely diced vegetables on top if desired.
