How to make it
- Tear the day-old bread into pieces, place it in a bowl, and moisten it with a little cold water, then let it soak for about 10 minutes until softened.
- Core and roughly chop the tomatoes, and roughly chop the green pepper, cucumber, onion, and garlic.
- Combine the soaked bread, tomatoes, pepper, cucumber, onion, and garlic in a blender along with the salt and vinegar.
- Blend on high until the mixture is broken down, then, with the blender running, slowly drizzle in the olive oil so the soup emulsifies and turns smooth and slightly creamy.
- Add the cold water a little at a time, blending until you reach a pourable, velvety consistency, then taste and adjust the salt and vinegar.
- For the silkiest texture, pass the gazpacho through a fine sieve to remove any skins and seeds.
- Chill the gazpacho in the refrigerator for at least 2 hours, then serve very cold with a drizzle of olive oil and finely diced vegetables on top if desired.
